RAB T-1

Paul sets off tomorrow, his friend Adam is collecting him and they are driving to Lands End with another of their colleagues. If you haven't got a clue about what I've been wittering on about for the last 9 months, or what is about to dominate our lives for the next 10 days - where have you been?  Paul is cycling from Lands End to John O'Groats for charity! 100 miles a day for 9 days.. Today has been all about the last little bits of prep and most importantly - biscuits.  Funny how these little last things become so important when you are trying to show someone you love them.  Can a biscuit really show a man how proud you are and how much you believe in them?  I'm not sure, but I'm trying!
Lemon biscuits - 100g sugar, 225g flour, 100g butter, zest and juice of 1 lemon, enough whisked egg to make a stiff dough.
Bake on gas 6 for 15 mins, then allow to cool
I made the icing using lemon juice instead of water, so they are lovely and zesty.  I scooped all the icing into a sandwich bag and snipped off a tiny corner to allow me to make my design.

  2. mmm - lemon biscuits ... I don't know why I was surprised that you found a bike shape cutter to make themed biscuits! :)
